Goat cheese mousse with strawberries

Ingredients for 4 servings:

  • 250 ml whipped cream, mascarpone or whipped cream
  • 200 g goat’s cheese
  • 50 g honey or brown sugar
  • 500 g strawberries
  • 2 tbsp balsamic vinegar, aged (or 4 tbsp balsamic vinegar with 1 tbsp honey reduced by half)

Working time approx. 10 minutes; Rest time approx. 2 hours; Total time approx. 2 hours 10 minutes

Whip cream or similar product until stiff, mix with goat’s cheese and honey; chill for a good 2 hours. Halve or quarter hulled strawberries, depending on their size, season with balsamic vinegar and a little honey, if desired. Divide between serving bowls, use an ice cream scoop or a tablespoon (wet first) to scoop out rounds of cream and place on top. Variations: Mix 2-3 tablespoons of drained green peppercorns into the strawberries. Halved, seeded grapes or orange segments are also delicious instead of strawberries. Chopped walnuts or pecans, roasted in a dry pan until fragrant, go well with grapes. Pine nuts, roasted in a dry pan until fragrant, go well with all types of fruit.
