Arugula – pear with Gorgonzola

Ingredients for 4 servings:

  • 2 bulb(s)
  • 2 tbsp brown sugar
  • 1 tsp coriander, ground
  • 50 ml balsamic vinegar
  • 200 g arugula
  • 200g Gorgonzola

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Caramelize the sugar in a pan. Deglaze with balsamic vinegar and add the coriander. Halve the peeled and cored pears and add them to the pan. Cook for about 10 minutes, turning once. Meanwhile, trim the arugula and divide it between plates. Place the Gorgonzola in the freezer for a short time to make it easier to dice. Arrange a pear half on top of the arugula and scatter the Gorgonzola cubes over it. Reduce the sauce over high heat until it reaches a creamy consistency, then pour it over the salad and pears.
