Red cabbage puree

Ingredients for 4 servings:

  • 800 g red cabbage
  • 1 apple
  • 1 onion(s)
  • 1 piece(s) ginger
  • 1 tbsp rapeseed oil
  • 1 tsp sugar
  • 300 ml vegetable stock
  • 1 tbsp white wine vinegar
  • salt and pepper

Working time approx. 15 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 55 minutes

Wash the red cabbage and slice or grate into thin strips. Dice the apple. Peel and finely chop the onion and ginger. Heat the oil and fry the onion and ginger. Add the red cabbage, apple, and sugar and fry briefly. Pour in the vegetable stock and vinegar and simmer for about 30 minutes, until the red cabbage is tender. Purée everything finely and season with salt and pepper. The red cabbage purée can be prepared a day in advance so everything can marinate well.
