- 100 g brown sugar
- 100 g butter, soft
- 20 g honey
- some vanilla
- ¼ tsp salt
- 65 g wheat flour (wholemeal)
- 100 g spelt flour (wholemeal)
- 35 g wheat flour, type 405
- 50 g oat flakes, fine
- 1 tsp cream of tartar baking powder

Preheat the oven to 175°C and line a baking sheet with parchment paper. For the dough, beat the egg, sugar, butter, honey, vanilla, and salt until fluffy. Then combine the flour with the oats and baking powder and stir in. This will form a relatively soft dough. Form small balls, place them on the baking sheet, and press them flat. Bake for 10-12 minutes; they should only be lightly browned, as otherwise whole-grain cookies always run the risk of becoming a bit bitter. After one or two days, the cookies will become a bit softer due to the honey, but they will still taste very good. Tip: You can refine these cookies with chocolate chips, nuts, raisins, or similar, but this isn’t really necessary, as they are already very aromatic.
