Ingredients for 3 servings:

  • 130 g rice
  • 40 g walnuts
  • 50 g Parmesan
  • 50 g peas and carrots, from the can
  • 2 eggs
  • 1 tsp mustard
  • 2 tsp vegetable broth
  • n. B. herbal salt
  • n. B. Pfeffer
  • e.g. breadcrumbs
  • 1 garlic clove(s)
  • some oil for frying

Working time approx. 15 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 25 minutes

easy and quick to prepare

Cook the rice using the soaked rice method and let it cool, or simply use the rice from the previous day. Finely chop the walnuts and garlic clove and mix with the rice, Parmesan cheese, breadcrumbs, peas and carrots, eggs, and mustard. Season with vegetable stock, herb salt, and pepper to taste, and form into small balls. Cover them on all sides with breadcrumbs and then place them in a pan with hot oil. Fry the meatballs on both sides until browned.
