Tomato salad with pine nuts and honey

Ingredients for 4 servings:

  • 4 tomatoes
  • 1 pack of pine nuts
  • 2 onions
  • 6 shots balsamic vinegar, light
  • 4 tbsp olive oil
  • 3 tbsp honey
  • 1 pinch of salt
  • some pepper
  • 1 shot of water
  • possibly basil, fresh

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Halve the tomatoes and then cut into chunks. Peel the onions and also chop them into small pieces. Toast the pine nuts in a pan without fat and let them cool. Meanwhile, combine the water, balsamic vinegar, and olive oil in a bowl and season with salt, pepper, and honey. Then add the tomatoes and onions and stir in the pine nuts. It also tastes great with fresh basil.
