Ingredients for 12 servings:
- 300 g strudel sheets
- 70 g butter
- 4 apples, small, preferably red-skinned
- 12 sprigs of fresh thyme, leaves removed
- 12 goat’s cheese coins
- 12 slice(s) bacon or streaky bacon
- pepper

Preheat oven to 200 degrees Celsius (top and bottom heat). Core the apples using an apple corer. Cut three nice slices from each apple, about 1 cm thick. Reserve the rest for another purpose. Briefly sauté the apple slices on both sides in a little butter. Melt the remaining butter. Cut out 24 circles of strudel dough, approximately 9 cm in diameter (e.g., using a pastry cutter). Spread half of them thinly with melted butter, then place a second slice of strudel dough on top and press down. Place on baking sheets lined with baking paper (makes two sheets). Place an apple slice on each dough sheet, sprinkled with thyme leaves. Wrap the goat cheese slices in the appropriately cut bacon or lardons and place on the apple slices. Brush the untopped dough with butter. Bake on the middle rack of the preheated oven for about 10 minutes. Serve sprinkled with pepper. If you like the bacon a little crispier, you can briefly turn on the grill at the end.
