Simple chocolate nut cake

Ingredients for 1 servings:

  • Butter for the mold
  • Cocoa powder for the mold
  • 250 g dark chocolate
  • 120 g butter
  • 100 g sugar
  • 4 eggs
  • 150 g hazelnuts, ground
  • 30 g flour
  • 2 tbsp apricot jam
  • 50 g powdered sugar

Grease the springform pan, dust with cocoa powder, and refrigerate. Melt 100g of chocolate pieces over a pan of simmering water. Preheat the oven to 175°C. Beat 100g butter with 50g sugar and melted chocolate until creamy. Separate the eggs. Stir the egg yolks into the chocolate mixture. Beat the egg whites with 50g of the sugar until stiff peaks form. Mix the nuts and flour, then fold them into the batter along with the beaten egg whites. Pour the batter into the pan. Bake for about 40 minutes. Let it cool in the pan and then remove from the pan. Warm the jam (I always do this in the microwave) and spread it over the cake. Finally, make the glaze: Heat 4 tablespoons of water with the icing sugar in a small saucepan. Melt 20g of butter in it and mix everything well. Cover the cake with this and refrigerate until the glaze has set before serving.
