Ingredients for 50 servings:

  • 10 elderflower heads
  • 1 kg sugar
  • 2 lemons, sliced
  • 1 pack of lemon acid or tartaric acid

Instructions

Working time approx. 10 minutes; Rest period approx. 1 day; Total time approx. 1 day 10 minutes

Recipe from my great-grandmother

Wash the elderflower blossoms and pour 10 liters of boiling water over them in a large earthenware pot along with the sugar, lemon juice, and tartaric acid. Let the mixture steep for 24 hours (it’s best to cover it with a large plate and place the pot in the cellar). In summer, this juice (or as a spritzer with mineral water) is a welcome refreshment.
