Very aromatic rice

  • 65 g rice (basmati wild rice mix)
  • Broth or water and salt

Working time approx. 5 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 35 minutes

Rice prepared according to this recipe is considerably more aromatic than “regular” boil-in-the-bag rice. The rice is cooked in twice the amount of liquid. Therefore, first measure the rice (in a glass jar). Toast the rice without oil, stirring constantly, until the rice grains are lightly golden brown. Now add the appropriate amount of liquid. Be careful, it will sizzle and steam vigorously. Depending on your taste and the dish, you can vary the liquid: just water, but then add salt, or vegetable, beef, or chicken broth. Close the lid and set the heat to the lowest setting. When the liquid has evaporated and small “holes” have formed in the surface of the rice, it is cooked. You can, of course, taste it occasionally to better control the “bite.” The toasted aromas give the rice a special flavor, which can be further enhanced or rounded off by the broth used. You can also toast the rice in (olive) oil, which will impart a completely different flavor. The amount of rice varies greatly, of course; here I’ve chosen the amount for one serving as a side dish. The preparation time depends on the amount of rice; for this serving, it takes about 30 minutes.
