Wild rice with egg, sun-dried tomatoes and Parmesan

Ingredients for 1 servings:

  • 1 jar wild rice
  • ½ onion(s)
  • 1 handful of bell pepper(s), colored, finely chopped
  • 2 tomatoes, dried
  • 1 egg(s) (free-range organic egg)
  • some salt and pepper
  • some chili powder
  • 1 tbsp Parmesan, to taste
  • 1 tbsp oil

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 55 minutes

First, cook the wild rice according to the package instructions with 2.5 times the amount of water for 45 minutes. Meanwhile, finely chop the onion and fry it in a pan with the oil over high heat until lightly browned. Then add the chopped bell peppers. Ten minutes later, add the chopped tomatoes to the pan. After a good five minutes, whisk the egg in a glass with salt, pepper, and chili and mix it with the vegetables in the pan. When the rice is ready, toss it with the pan-fried vegetables. The hot rice will reheat the cooled food. Sprinkle with finely grated Parmesan cheese, if desired.
