Ingredients for 1 servings:

  • 2 eggs
  • 200 g sugar
  • 300 g hazelnuts, ground
  • 1 packet of vanilla sugar
  • 1 tsp cinnamon
  • 2 drops of bitter almond flavor
  • 60 wafers, 50 mm, round
  • 60 hazelnuts, whole

Beat the eggs and sugar for 10 to 15 minutes until frothy. Add the ground nuts, vanilla sugar, bitter almond flavoring, and cinnamon and stir briefly. The mixture should be neither too soft nor too firm, just enough to easily form into balls. Add a little more ground nuts if necessary. With moistened hands, form 50 to 60 balls from the mixture. Place the balls on the wafers and flatten slightly. Place a hazelnut in the center of each ball and press down lightly. Bake in a preheated oven at 160°C for about 20 minutes. It’s best to let the balls rest in a tin in a cool place for several days.
