Pasta in a light tomato sauce with vegetables

Ingredients for 2 servings:

  • 250g spaghetti
  • 1 bell pepper(s)
  • ½ onion(s)
  • 1 tomato(s)
  • 1 tbsp tomato paste
  • 1 tbsp herb cream cheese
  • 200 ml milk
  • salt and pepper
  • Paprika powder
  • n. B. Herbs, Italian
  • 1 tbsp butter

Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes

simple, quick and healthy

Cook the pasta in salted water according to the package instructions. Meanwhile, dice the bell pepper and onion and fry in the butter. When the onions are translucent, add the tomato paste and fry, then add the cream cheese and deglaze with the milk. Add the spices and simmer for 5 minutes. Drain the pasta, add it to the pan, and simmer for another 2-3 minutes. Just before the end, dice the tomato and add it so it heats through but doesn’t lose its bite. You can, of course, use other vegetables. Parmesan cheese also tastes good with it.
