Honey-Lemon-Ginger Chicken

Ingredients for 2 servings:

  • 3 chicken breasts
  • 1 tsp olive oil
  • 3 cloves garlic
  • 2 tsp ginger, grated
  • ½ cup honey
  • 1 lemon(s), zest and juice
  • 1 tbsp apple cider vinegar
  • 1 tbsp soy sauce
  • 2 tsp cornstarch
  • salt and pepper
  • Oil for frying

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 30 minutes

Cut the chicken breasts into bite-sized pieces. Then fry them in a little oil for about 4-5 minutes, seasoning with salt and pepper. Set aside. Sauté the olive oil, garlic, and ginger over medium heat for 2-3 minutes. Add the honey, lemon juice, lemon zest, apple cider vinegar, soy sauce, and cornstarch one at a time. Add the meat, simmer, and thicken. Serve with rice, 10% Greek yogurt, and a green salad.
