Green asparagus with buttered breadcrumbs

Ingredients for 2 servings:

  • 500 g asparagus, fresh green
  • ½ liter of water
  • ½ tsp salt
  • 1 pinch(s) of sugar
  • 1 dashes lemon juice
  • 1 tbsp butter
  • 1 tbsp oil (safflower oil)
  • 4 tbsp breadcrumbs
  • 1 pinch of salt
  • a few stalks of parsley

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 25 minutes

Cook the green asparagus, ends peeled if necessary, in a pot of salted water with a little lemon juice and a pinch of sugar until crisp (approx. 5 minutes). Drain the asparagus and use the water for a sauce. For the breadcrumbs: Heat the butter and oil in a hot pan, add the breadcrumbs, and let them brown. Season with salt. Drain the asparagus well and serve with the butter and breadcrumb mixture. Garnish with parsley.
