Orange and coconut macaroons

Ingredients for 1 servings:

  • 2 organic oranges
  • 3 eggs
  • 1 pinch of salt
  • 150 g sugar
  • 3 tbsp orange liqueur
  • 275 g desiccated coconut

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 40 minutes

Makes about 50 pieces.

Makes about 50 macaroons. Rinse the oranges with hot water and dry. Use a zester to peel off the zest in fine strips. Beat the eggs and salt until frothy, gradually adding the sugar. Stir in the orange liqueur and orange zest, then fold in the desiccated coconut. Using two moist teaspoons, place small heaping portions onto a baking sheet lined with baking paper. Bake in a preheated oven at 175°C (top/bottom heat) for about 8 minutes. Turn off the oven and let the coconut macaroons dry for another 12 minutes. Then let them cool completely on a wire rack.
