Asparagus with eggs

Ingredients for 3 servings:

  • 500 g asparagus, green
  • 6 eggs, hard-boiled
  • 40 g butter
  • 20 g flour
  • 180 ml sour cream
  • 200 ml water (asparagus cooking water)
  • salt and pepper
  • 1 tsp soy sauce, sweet
  • Parsley

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 40 minutes

Peel the asparagus and cut into 4 cm pieces. Simmer in salted water for about 15 minutes. Drain and reserve 200 ml of the water for the sauce. Heat the butter, stir in the flour, and sauté until golden brown. Pour in the asparagus water and cream and simmer for about 1 minute, stirring. Stir in the soy sauce and season to taste. Cut the peeled eggs into wedges and add them to the sauce with the asparagus. Serve with chopped parsley. Potatoes go well with this dish.
