Ingredients for 1 servings:
- 3 egg whites
- 1 pinch of salt
- 250 g powdered sugar
- 200 g almonds, ground
- 150 g spelt flour type 630
- 2 vanilla pods, including the pulp

Beat the egg whites until stiff peaks form. Add the salt and powdered sugar and stir until the mixture forms strings. Reserve two tablespoons of the mixture for the icing. Mix the remaining egg white mixture with the almonds, flour, and vanilla seeds. Using wet hands, form this firm, kneadable dough into small “Schupfnudeln” (dumplings) and place them on a baking sheet lined with foil or paper. Two baking sheets are required for the specified amount. Brush the dough pieces with the remaining egg white sugar and bake in a preheated oven at approximately 150°C (convection oven) for approximately 10-12 minutes. The egg white mixture should have a slight browning. This quantity yields approximately 70-75 cookies. Tip: Instead of vanilla, you can also use gingerbread or speculatius spice, or even ginger or cinnamon.
