Ingredients for 1 servings:
- 275 g spelt flour type 630
- 100 g powdered sugar
- 100 g ground almonds
- 125 g butter
- 3 eggs
- 100 g dark chocolate coating
- 1 tsp orange zest, dried
- 1 tsp cinnamon powder
- 1 pinch of cardamom powder
- 1 tsp. clove powder
- 1 pinch of ginger powder
- 1 tbsp jelly (orange jelly)
- 2 tbsp orange jam, bitter
Instructions
Working time approx. 50 minutes; Rest time approx. 12 hours; Cooking/baking time approx. 12 minutes; Total time approx. 13 hours 2 minutes
bitter-sweet seduction
Melt the butter and chopped chocolate coating in a saucepan. Meanwhile, combine the flour with powdered sugar, ground almonds, eggs, and spices. Slowly incorporate the butter and chocolate mixture. Wrap the dough in plastic wrap and let it rest in the refrigerator overnight. Now, working in batches, roll out the dough between two layers of plastic wrap to approximately 2 mm thick and cut out stars. Place these on a baking sheet lined with foil or paper. Make a hole in the center of half of the stars. Bake the cookies in a preheated oven at approximately 150°C (top/bottom heat) for 10-12 minutes. Remove the cookies and let cool. Gently warm the orange jelly until it becomes liquid and brush it over the “whole” stars. This way, the “hole stars” will stick to the whole stars and allow them to set. Fill the holes with orange marmalade using a knife and let the cookies dry overnight. Then sprinkle the cookies with powdered sugar. Of course, you can also bake the cookies with other types of jam.
