Spaghetti with arugula and pesto

Ingredients for 1 servings:

  • ½ onion(s)
  • 1 garlic clove(s)
  • 200 g tomatoes
  • 40 g arugula
  • 100g spaghetti
  • salt and pepper
  • 1 tsp oil
  • 1 tbsp pesto (any type you like)
  • 1 tbsp Parmesan, grated

Peel and dice the onion. Crush the garlic. Cut the tomatoes into wedges. Roughly chop the arugula. Cook the spaghetti in boiling salted water according to the package instructions until al dente, then drain. Heat oil in a pan. Sauté the diced onion with the garlic. Add the tomatoes and pesto. Season with salt and pepper. Mix the pasta and Parmesan into the sauce. Stir in the arugula.
