Spaghetti with arugula and olives

Ingredients for 4 servings:

  • 500g spaghetti
  • salt water
  • 4 tomatoes, roughly chopped
  • 2 cloves garlic
  • 1 tsp sea salt
  • 1 chili pepper(s), dried, chopped
  • 3 tbsp black olives, pitted
  • 3 tbsp arugula, roughly chopped
  • 2 tbsp olive oil
  • salt and pepper
  • 2 tbsp Parmesan, sliced

Working time approx. 15 minutes; Total time approx. 15 minutes

First, crush the garlic with the sea salt. Then, cook the spaghetti in salted water as usual and drain. Meanwhile, combine the tomatoes, garlic, chili, and olives, season generously with salt and pepper, and stir in the olive oil. Let stand until the spaghetti is cooked. Fold the tomato mixture into the cooked spaghetti. Add the arugula and sprinkle with freshly shaved Parmesan cheese.
