Cheese rösti with smoked char fillets

Ingredients for 2 servings:

  • 500 g potatoes
  • n. B. onion(s), approx. 1 – 2
  • 1 egg(s)
  • Salt and pepper, freshly ground
  • 75 g grated cheese (e.g. Emmental)
  • 1 tbsp, leveled flour
  • some oil for frying
  • 2 char fillet(s), smoked

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 40 minutes

Finely dice the onion and sauté in a little oil. Peel the potatoes and finely grate them. Squeeze them thoroughly in a cloth, collecting the liquid in a bowl. Let the liquid stand for a moment so that the starch can settle. Drain the liquid and mix the starch with the egg and flour. Stir in the diced onion and season generously with salt and pepper. Add the potatoes and cheese and mix everything well. Heat a little oil in a non-stick pan. Shape 2 heaped tablespoons of the potato mixture into 6 finger-thick rösti in the pan and fry over medium heat until the underside is firm and slightly crispy. Turn the rösti over and lightly brown the other side. Serve the rösti with the char fillets on plates. A cucumber and apple salad or cucumber salad goes well with this.
