Cashew-walnut cookies

Ingredients for 1 servings:

  • 150 g honey
  • 100 g sugar, brown
  • 100 g butter
  • 2 eggs
  • 1 vanilla pod(s)
  • 1 pinch of salt
  • 150 g cashew nuts, chopped
  • 300 g wheat flour
  • 1 tsp baking powder
  • 20 walnuts

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 12 minutes; Total time approx. 27 minutes

Makes about 40 cookies

Preheat the oven to 180°C (350°F) or 160°C (320°F) fan-assisted. Beat the honey with the sugar and softened butter until fluffy. Add the eggs, vanilla extract, salt, and chopped cashews. Combine the flour and baking powder, fold into the mixture, and mix until smooth. Use two teaspoons to place small mounds of dough onto baking sheets lined with baking paper. Halve the walnuts and press half a walnut onto each mound. Bake the cookies in the oven for 12-15 minutes. Let cool on a wire rack.
