Ingredients for 3 servings:
- 6 large potatoes
- 1 tbsp olive oil
- 1 tbsp ajvar
- coriander
- Thyme
- pepper
- Spice mix (French fries seasoning)
Instructions
Working time approx. 15 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 45 minutes
Preheat oven to 200°C. Place ajvar and olive oil in a sealable container. Add coriander, thyme, and pepper, if desired, and mix (I used a lot of the spices). Wash the potatoes, but don’t peel them, and cut them into wedges. Add the potato wedges to the container with the oil mixture, seal, and gently shake to coat the potatoes. Place the potato wedges skin-down on a baking sheet lined with parchment paper, pour over the remaining oil mixture from the container, and sprinkle generously with French fries seasoning. Place the potato wedges in the oven for about 30 minutes. The serving size is for the potato wedges as a side dish.
