Raspberry sorbet

Ingredients for 1 servings:

  • 1 kg raspberries, frozen
  • 250 ml water
  • 150 g sugar
  • 2 sprigs of mint

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Thaw the raspberries and blend them very finely with a food processor. Combine the water, sugar, and mint in a saucepan and heat over low heat until the sugar has dissolved. Then increase the heat and bring the mixture to a boil. Remove the pan from the heat, let the liquid cool completely, and then remove the mint. Strain the finished puree through a fine-mesh sieve to remove any small seeds. Mix the berry mixture with the liquid, transfer everything to a sealable plastic container, and place it in the freezer. When the mixture begins to freeze (the edges should be hard, the center still slightly soft), blend the sorbet again until it is nice and smooth. Return it to the plastic container and allow it to freeze completely.
