Rhubarb strudel or apple strudel

Ingredients for 1 servings:

  • 370 g flour
  • 1 egg(s)
  • 40 g oil
  • 120 g water, lukewarm
  • 10 g vinegar
  • ½ tsp salt
  • 700 g rhubarb or apples, in pieces
  • 150 g walnuts
  • 100 g sugar
  • 45 g muesli
  • 1 packet of vanilla sugar
  • 75 g cream
  • 1 pinch of cinnamon
  • 3 tbsp chia seeds
  • 30 g milk
  • 80 g butter

Working time approx. 30 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 50 minutes; Total time approx. 1 hour 50 minutes

from the Thermomix

For the strudel dough, mix the flour, egg, oil, water, vinegar, and salt in the Thermomix® for 2 minutes/dough speed until you have a dough. Chill the dough for 30 minutes. For the filling, mix the rhubarb or apples, walnuts, sugar, muesli, vanilla sugar, cream, chia seeds, and cinnamon in the Thermomix® for 20 seconds/speed 4. Roll out the dough thinly on a floured tea towel, then use your hands to make it even thinner, starting from the center. Melt 50g of butter in the Thermomix® and spread it over the dough. Spread the filling over the rolled out dough, leaving 3cm free around the edges. Fold in the sides and, using the tea towel, shape it into a roll from bottom to top. Then place the roll like a horseshoe on a greased baking tray. Mix the remaining 30g of butter with the milk and brush it over the strudel before and during baking. Bake in a preheated oven at 180°C for 50 minutes.
