Barbecue marinade or barbecue sauce for chicken and other barbecues

Ingredients for 4 servings:

  • 3 tbsp ketchup
  • 2 tbsp orange juice
  • 1 tbsp honey
  • 1 tbsp chili sauce, sweet and hot
  • 1 tbsp orange peel, finely diced, if available
  • 1 tbsp soy sauce
  • clove(s) garlic, young, finely diced
  • 1 pepper, freshly ground

Instructions

Working time approx. 15 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 15 minutes

Mix everything thoroughly. Use as a marinade: It’s best to marinate the meat in a freezer bag with the marinade for one hour. Chicken wings, for example, are then grilled at room temperature for about 20 minutes over indirect heat. Be careful, if the grill is very hot, the food will quickly become brown. The marinade is enough for 800g of chicken wings. Use as a barbecue sauce for: shashlik, meatballs, or with a little curry, as a curry sauce for veal sausages and anything else you like. The barbecue sauce is enough for 6-8 servings.
