Vegetarian chickpea salad

Ingredients for 4 servings:

  • 1 cucumber(s)
  • 2 tomatoes
  • 1 bell pepper(s), red
  • 3 spring onions or 1 red onion
  • Parsley
  • 1 can chickpeas
  • 200 g feta cheese or shepherd’s cheese
  • 3 cloves garlic
  • 30 ml balsamic vinegar, light
  • 30 ml olive oil
  • 1 tbsp sambal oelek or ajvar, optional

This is my absolute favorite salad, and everyone who tried it immediately wanted the recipe. So I don’t want to withhold this delicious, yet very simple salad from you. Chop the cucumber, tomatoes, peppers, and onions and place them in a bowl. Drain the chickpeas and add them to the vegetables. Finely chop the parsley and add them to the vegetables. Press the garlic through a garlic press or finely grate it. In a bowl, make a dressing from olive oil, vinegar, and garlic. Pour over the vegetables and mix. Season with salt and pepper. Dice feta or goat’s cheese and sprinkle over the salad. If you like it spicier, you can add sambal oelek or ajvar to the salad. Serve as a side dish or main course with baguette. It tastes even better if you let the salad marinate overnight in the refrigerator.
