Melon salad with feta and blackberries

Ingredients for 4 servings:

  • 1 Galia melon or cantaloupe melon
  • 1 cucumber(s)
  • 200 g feta cheese
  • 1 lime(s)
  • 125 g blackberries, fresh
  • 6 tbsp olive oil
  • salt and pepper
  • 2 mint sprigs

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Sort the blackberries if necessary and wash carefully. Halve the melon, peel, remove the seeds, and cut the flesh into approximately 1.5 cm cubes. Place a handful of melon cubes in a blender. Place the rest in a salad bowl. Wash and halve the cucumber. Peel the cucumber and scrape out the seeds if desired. Halve the cucumber halves again lengthwise if desired, and then cut into 0.5 cm thick slices. Add the slices to the salad bowl. Squeeze the lime. Purée the handful of melon cubes with the lime juice in a blender and mix with olive oil. Season the dressing with salt and pepper. Crumble the feta cheese, pour it over the melon cubes and cucumber slices, and toss everything well with the dressing. Arrange the salad on plates, scatter the blackberries and mint on top, and serve with toasted toast, if desired.
