Ingredients for 1 servings:

  • 1 liter red wine vinegar
  • 1 garlic clove(s)
  • 1 tsp peppercorns, green
  • 1 onion(s)
  • 1 tbsp chives, fresh, chopped
  • 1 tbsp parsley, fresh, chopped
  • 1 tbsp sage, fresh, chopped
  • 1 tbsp tarragon, fresh, chopped
  • 1 tbsp lemon balm, freshly chopped

Instructions

Working time approx. 15 minutes; Rest period approx. 7 days; Cooking/baking time approx. 5 minutes; Total time approx. 7 days 20 minutes

Delicious with all leaf salads

Finely chop the onion and garlic clove. Place them in a jar along with the chopped herbs, add the peppercorns, and pour over the hot (but not boiling!) vinegar. Cover tightly and let it steep in a cool place for one week. Strain and transfer to a container.
