Regina's popular gingerbread

Ingredients for 1 servings:

  • 1 kg flour
  • 300 g sugar
  • 400 ml honey
  • 200 g almonds, finely ground
  • 200 g candied orange peel and/or lemon peel
  • 1 pack of gingerbread spice
  • 1 tsp baking soda
  • 1 pinch of salt

Instructions

Working time approx. 30 minutes; Rest period approx. 2 days; Total time approx. 2 days 30 minutes

Grandma’s recipe

Beat the eggs until very fluffy and gradually add the previously weighed sugar. Gradually add the honey, candied orange and/or candied lemon peel, almonds, salt, and gingerbread spice, and mix thoroughly. Lightly mix the baking soda with the flour and slowly add it to the remaining ingredients, kneading thoroughly. Let the dough rest for at least 24 hours, but 48 hours are better, at a cool temperature. After the resting time, roll out the dough on a floured surface to a thickness of about 1-2 cm and cut into several pieces. Place the gingerbread pieces on the greased baking sheet. Bake for about 15 minutes at 200°C (top/bottom heat).
