cold and warm a delight
Carefully shake out the elderflower blossoms and inspect them for insects. Remove any if necessary. Do not wash the umbels. Cut the blossoms from the large stems and place them in a bowl. Gently warm the milk, but do not boil or overheat. Add the honey and vanilla sugar and stir. If you like, you can omit the vanilla sugar. Now pour the milk over the blossoms and let them steep for about half an hour. Then strain through a sieve and chill in the refrigerator. You can also heat them now and then enjoy.
