Ingredients for 3 servings:

  • 1 jar beans (yellow wax beans)
  • e.g. potato(s), peeled, diced
  • 1 small onion(s), finely diced
  • some salt and pepper
  • 2 tbsp vinegar (fruit or apple cider vinegar)
  • some flour for the roux

Instructions

Working time approx. 5 minutes; Total time approx. 5 minutes

Recipe from childhood in the 60s

Drain the beans and reserve the bean water. Use the same number of potatoes as beans. Cook the diced potatoes and onion in a little water until tender. Make a roux with the bean broth and season with salt, pepper, and vinegar (about 2 tablespoons) to taste. Add the beans, drained potatoes, and onions, simmer briefly, and season again.
