Baked mashed potatoes

Ingredients for 4 servings:

  • 4 servings of mashed potatoes (homemade)
  • 4 eggs
  • 100 g ham or sausage leftovers
  • ½ cup sour cream
  • n. B. herbs
  • 100 g cheese, grated, e.g. Emmental, Gouda
  • Butter for greasing the mold
  • salt and pepper
  • nutmeg

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Using up leftover mashed potatoes and ham or sausage

Grease a baking dish with butter, pour in the mashed potatoes, and smooth the surface. Then, using a spoon, make four indentations and carefully drop a raw egg into each indentation. Chop the ham (or any leftover sausage) into small pieces and mix with the sour cream. Season to taste with herbs, nutmeg, salt, and pepper, and pour over the eggs or over the mashed potatoes, depending on the baking dish. Finally, sprinkle with grated cheese. You can also use leftover vegetables instead of the sausage. Bake in the oven at 225 degrees Celsius on the middle rack for about 30-45 minutes.
