Ingredients for 2 servings:

  • 2 servings of mashed potatoes from the day before, large portions
  • 2 m.-sized onion(s)
  • 2 slices of ham, large, of your choice
  • 2 tbsp, heaped Parmesan, grated
  • 3 slices of cheddar cheese
  • salt and pepper
  • Oil or butter

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes

super easy use of leftovers

Preheat the oven to 160°C fan/convection oven. Peel and dice the onions, then sauté in a little oil or butter until translucent. Meanwhile, grease a suitably sized casserole dish, pour in the room-temperature mashed potatoes, and pierce them lightly with a fork or spoon to allow for better heat circulation. Cut the ham into thin strips and arrange them on top of the mashed potatoes. Season the onions with salt and pepper, stir again, and scatter them over the top. Sprinkle the casserole with Parmesan and top with the Cheddar cheese, and bake for 20 minutes.
