- 1 portion of fresh mushrooms, best picked by yourself
- 3 spring onions
- 1 egg(s)
- ½ tbsp butter
- Garlic
- Parsley
- pepper

perfect for mushroom season, good as a side dish to bread
Sauté the mushrooms in butter, slice the spring onions into rings, and fry them with the onions. Season with garlic. Crack the egg over the mushrooms and fry for a few minutes, stirring frequently, until the mixture has a consistency similar to scrambled eggs. Season with parsley and the remaining seasonings, stir, and serve with a slice of rye bread, for example.
