Ingredients for 4 servings:

  • 4 sausages
  • 1 leek(s)
  • 1 zucchini
  • 4 eggs
  • 6 slices of mountain cheese
  • salt and pepper
  • Parsley or chives for sprinkling

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 45 minutes

You’ll need a large frying pan or roasting tin. Slice the sausages, leeks, and zucchini. Fry the sausages, add the zucchini and leeks, and season with salt and pepper. Whisk the eggs with a fork and season with salt and pepper. Remove the pan from the heat and spread the eggs evenly over the pan. Then add the sliced ​​mountain cheese and cover the pan. Once the egg is set and the cheese has melted, sprinkle with parsley or chives and serve. Remoulade or crème fraîche goes well as a dip. This sausage dish tastes good cold the next day, at least for me. It goes well with any kind of salad and bread.
