Ingredients for 4 servings:
- 4 sausages
- 1 leek(s)
- 1 zucchini
- 4 eggs
- 6 slices of mountain cheese
- salt and pepper
- Parsley or chives for sprinkling
Instructions
Working time approx. 15 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 45 minutes
You’ll need a large frying pan or roasting tin. Slice the sausages, leeks, and zucchini. Fry the sausages, add the zucchini and leeks, and season with salt and pepper. Whisk the eggs with a fork and season with salt and pepper. Remove the pan from the heat and spread the eggs evenly over the pan. Then add the sliced mountain cheese and cover the pan. Once the egg is set and the cheese has melted, sprinkle with parsley or chives and serve. Remoulade or crème fraîche goes well as a dip. This sausage dish tastes good cold the next day, at least for me. It goes well with any kind of salad and bread.
