Salmon and arugula pasta

Ingredients for 2 servings:

  • 250 g salmon fillet(s)
  • 500 g tagliatelle pasta
  • 250 ml cream
  • 1 shallot(s)
  • 1 garlic clove(s)
  • 1 tsp vegetable stock cube
  • 1 tsp tomato paste
  • 1 tsp butter
  • 250 g arugula
  • salt and pepper
  • Parmesan

Working time approx. 20 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 30 minutes

Slice the shallot, dice the salmon, and fry them together in a pan. Meanwhile, cook the pasta according to the package instructions. Add the cream, 1 teaspoon of tomato paste, and 1 teaspoon of vegetable stock powder, then simmer for five minutes. Just before serving, add the garlic and season to taste. Transfer the tagliatelle to a pasta dish, top with the salmon cubes and the cream sauce. Sprinkle the arugula over the sauce, and finish with Parmesan cheese. 800 kcal per serving.
