Rice – vegetable – pan with cream cheese – tomato sauce

Ingredients for 2 servings:

  • 1 bag of rice
  • salt water
  • ½ cucumber(s) or zucchini
  • 150 g broccoli
  • 100 g peas
  • 100 g carrot(s), fresh or frozen, chopped
  • 1 bell pepper(s)
  • 1 onion(s)
  • 4 tbsp tomato paste
  • 100 ml vegetable stock
  • 100 g cream cheese
  • salt and pepper

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

First, cook the rice in salted water. Meanwhile, dice the onion, bell pepper, and cucumber and fry them in a pan with hot oil. Then add the carrots, peas, and broccoli. After a short while, add the 4 tablespoons of tomato paste and mix everything well. Deglaze with 100 ml of vegetable stock and bring to a boil. Then stir in the cream cheese and season with salt and pepper to taste. Bring everything to a boil again, then add the rice and mix well. If you like meat, you can also fry chicken strips beforehand and add them to the pan. That tastes delicious too.
