Kohlrabi schnitzel

Ingredients for 2 servings:

  • 1 kohlrabi
  • ½ tbsp flaxseed
  • ½ tbsp chia seeds
  • 3 tbsp water
  • 1 tbsp Dijon mustard, alternatively medium hot mustard
  • salt and pepper
  • n. B. Paprika powder, sweet
  • ½ tsp tomato paste
  • 1 cup breadcrumbs
  • n. B. Oil for frying

Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes

Peel the kohlrabi and cut into slices about 1 cm thick. Bring a pot of water to a boil and cook the kohlrabi slices for about 7-8 minutes, until the slices are firm to the bite, but by no means raw or too soft! Blend the flaxseed and chia seeds into a powder in a blender and mix with the three tablespoons of water. Stir in the mustard, spices, and tomato paste. Pat the kohlrabi slices dry and then place them in the mixture, ensuring they are coated on all sides. You may need to mold the mixture onto the slices with your fingers. Then coat the coated slices in breadcrumbs and fry in a pan until golden brown.
