Fried potatoes with fried herring

Ingredients for 2 servings:

  • 400 g potato(s) (waxy)
  • 2 onions
  • 30 g bacon
  • 20 g clarified butter
  • pepper
  • Salt
  • Paprika powder, sweet
  • 1 can of fried herring
  • 100 g lettuce (cucumber salad)

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 40 minutes

Boil the potatoes in their jacket potatoes, peel them, and let them cool. Then slice them. Slice 1 onion into rings for the fish, the other for the potatoes into cubes, and dice the bacon. Heat half of the clarified butter in a pan, fry the bacon and diced onion, remove from the pan, and set aside. Heat the remaining lard in the pan and fry the potatoes. Season with pepper, salt, and paprika, and stir in the bacon and diced onion. Drain the herring and cucumber salad and serve on plates with the fried potatoes. Arrange the onion rings on top of the fried herring.
