Ingredients for 4 servings:

  • 100 ml olive oil
  • 750 g potato(s), waxy
  • Salt
  • Black pepper, freshly ground
  • 1 garlic clove(s)
  • 2 chili peppers, red, hot
  • 50 g coriander leaves, fresh

Instructions

Batatis harras

Peel the raw potatoes and dice them. Heat the olive oil in a sufficiently large pan. Add the potatoes to the pan and fry over medium heat for about 20-25 minutes until cooked through. Press the garlic into the pan and fry briefly. Season the potatoes with salt and pepper. Deseed and finely chop the chilies. Add them to the pan, stir in, and fry briefly. Sprinkle with coriander and serve.
