Green spelt cakes

Ingredients for 4 servings:

  • 200 g green spelt, crushed
  • 300 ml vegetable stock
  • 1 zucchini
  • 1 carrot(s)
  • 1 spring onion(s)
  • 2 tbsp parsley, chopped
  • 2 eggs
  • 6 tbsp breadcrumbs
  • 2 tbsp cheese (grated cheese)
  • salt and pepper
  • curry powder
  • Paprika powder
  • Oil, for frying

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 35 minutes

tasty and quick

Place the green spelt meal in a large bowl and pour over the boiling vegetable stock. Let it swell. In the meantime, thoroughly wash the zucchini and carrot, peeling and gratering if necessary. Slice the spring onion into very thin rings and chop the parsley. Mix the prepared vegetables and the remaining ingredients with the green spelt meal, adding a little more breadcrumbs if the mixture is too sticky. Then form into cakes. Heat oil in a pan and fry the cakes until golden brown on each side.
