Ingredients for 4 servings:
- 2 mangoes
- 2 avocados
- 100 g goat’s cheese
- 4 tbsp vegetable broth, cold
- 3 tbsp olive oil
- 2 tsp lemon juice
- salt and pepper

great as a starter, especially in summer
First, peel and pit the mangos and avocados, then cut them into any shape you like (cubes, slices, etc.) and arrange them on a plate. Mix a dressing with olive oil, vegetable stock, salt, lemon juice, and pepper and toss to coat the salad. Finally, crumble the goat’s cheese over the salad.
