Apple and pea soup with mint

Ingredients for 4 servings:

  • 3 apples, sour
  • 2 onions
  • 2 tbsp butter
  • 400 g peas, frozen
  • 1 tsp sugar
  • 150 ml apple juice
  • 700 ml vegetable stock
  • 3 sprigs of mint
  • 150 ml cream
  • 1 tsp lemon juice
  • salt and pepper

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 50 minutes

Peel and dice the onions. Peel, quarter, core, and finely dice the apples. Melt the butter in a saucepan. Sauté the onions, apples, and peas in it. Sprinkle the sugar over the onions and caramelize. Deglaze with apple juice and vegetable stock. Simmer for about 10 minutes. Wash the mint, shake dry, remove the stems, and chop finely. Add to the soup and puree. Pour in the cream. Season with salt, pepper, and a little lemon juice, and puree again until frothy. It also tastes great with strips of smoked salmon, sprinkled on top just before serving.
