Indian-style bread soup

Ingredients for 2 servings:

  • 250 g mixed bread, dark
  • 30 g lentils, red
  • 5 large dates
  • 5 m.-sized garlic cloves, pickled
  • ¾ liter of water
  • 250 ml oat milk (oat drink)
  • 1 tsp, heaped vegetable stock powder
  • 1 tsp curry powder
  • 1 tsp curry paste, yellow
  • 3 tbsp agave syrup

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 40 minutes

Pour the water and oat milk into a large saucepan. Stir in the vegetable stock, curry powder, curry paste, and agave syrup. Bring the mixture to a boil. Meanwhile, slice the bread. Dice the slices and add them to the cooking water with the lentils. Pit and finely chop the dates. Finely chop the garlic and add both to the pan. Simmer everything over low heat for about 20-25 minutes, stirring occasionally.
