Spinach dumplings with cheese core

Ingredients for 4 servings:

  • 400 g creamed spinach (frozen)
  • 450 g bread(s) (dumpling bread), wholemeal
  • 250 ml milk
  • 4 tbsp wheat flour
  • 120 g low-fat cheese (e.g. beer cheese, Edam)
  • 2 eggs
  • nutmeg
  • salt and pepper
  • possibly breadcrumbs
  • salt water

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

vegetarian

Heat the spinach, then mix with the dumpling bread, milk, flour, egg, and seasonings. If the mixture is too soft, you can firm it up with breadcrumbs. Cut the cheese into small cubes. With wet hands, form dumplings, each with a cheese cube in the center. Bring salted water to a boil, add the dumplings, and let them simmer until tender. Enjoy with a green salad or other vegetable salad, and perhaps a yogurt and herb sauce.
