Broccoli Penne

Ingredients for 2 servings:

  • 500 g broccoli
  • 250 g penne or macaroni
  • 1 tbsp butter
  • 2 cloves garlic
  • 1 peperoncini or chili pepper
  • 40 g Parmesan, grated
  • e.g. salt and pepper

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Divide the broccoli into florets. Boil in salted water until just tender, remove, and reserve 2 dl of the cooking liquid. Cook the penne until al dente, and drain. Slice the garlic and finely chop the chili pepper. Heat the butter, fry the garlic until crispy, and briefly sauté the pepperoncini or chili pepper. Stir in all but a few florets of the broccoli and pour in the cooking liquid. Simmer briefly, then mash the broccoli with a fork. Season with salt and pepper to taste. Stir in the cheese and penne, warm briefly, and serve.
