Ingredients for 1 servings:

  • 20 g potato fiber or wheat fiber
  • 20 g psyllium husks
  • 20 g oat bran
  • 20 g flaxseed flour
  • 20 g almond flour
  • ½ tsp salt, approx. 3 – 4 g
  • 1 tsp baking soda, approx. 7 – 8 g
  • 1 egg(s)
  • 1 cup of water, approx. 240 ml
  • Sesame or poppy seeds for rolling

Instructions

Working time approx. 10 minutes; Rest time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 50 minutes

High-fiber, low-carb Swedish bread rolls, ideal for diabetics

Place 3-4 tablespoons of sesame and/or poppy seeds on a plate and set aside. Weigh all the other dry ingredients and mix well. Mix one egg in about 240 ml of water, then thoroughly stir in the dry mixture. Let the dough stand and expand for 15-20 minutes. Preheat the oven to 180-200 degrees Celsius. Drop the dough in portions onto the plate using two spoons, roll in the sesame and/or poppy seeds, and place on a baking sheet lined with baking paper. Then bake for about 20-25 minutes. Check the rolls occasionally to ensure they don’t get too brown. Let the finished rolls cool completely before slicing and topping them.
