Finnish dough flatbreads à la Anu

Ingredients for 1 servings:

  • 250 g butter
  • 200 g Gouda, grated
  • 550 g flour
  • 1 ½ tsp baking powder
  • 100 g water
  • 400 g cottage cheese
  • 200 g Gouda, grated
  • 5 eggs
  • 300 g leek, cut into rings
  • 1 tsp salt
  • n. B. Pfeffer
  • 1 zucchini, diced
  • 1 bell pepper(s), red or yellow, diced

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 1 hour 10 minutes

Pirakka

Knead the first 5 ingredients into a smooth dough. Divide into flat, oval pieces (approx. 10 x 5 cm) and place on a baking sheet. For the filling, mix the cottage cheese, eggs, Gouda cheese, leek, salt, and pepper. Bake in a preheated oven at 225°C (425°F) for 10 minutes on the middle rack. Then place the filling in the center of the pieces. Top with diced bell peppers or zucchini, and bake for another 30 minutes at 200°C (400°F). One serving is sufficient for 1-2 baking sheets, depending on the thickness of the dough. The pirakka are delicious hot or cold.
